The cuisine is authentically Caledonian, and made of fresh local produce.
All venison, beef and pork meats are from the Bourail area, and are exquisite, the kind of to-die-for stuff. Fruits and vegetables are equally fresh. Dining at Nëkwéta is also a great opportunity to taste fresh fish such as yellow fin tuna, mahi-mahi (dolphin fish), spanish mackerel, wahoo and parrot fish. All these produce are wonderfully cooked by the house mistress, Stéphanie. A fine selection of French wines is available to complement all meals. The culinary experience is enhanced by the set up, guests can sip a drink while admiring the numerous sculptures and carvings, or simply sitting around the fire pit integrated in the deck, during fresh winter nights.
